This recipe uses whole caramels that are unwrapped and melted down. We are going to share little information and history on the caramel?

First what is a caramel made from? These little square nuggets come wrapped in cello-phane and are basically made from brown sugar and butter. Although caramels are similar to other candies, they differ in the fact that they contain milk and fat. The caramel stays of the softer side because of their cooking method. They are cooked at a lower temperature only to 245F(118C), and they contain a higher percentage of moisture. Their preparation process is what makes them so usable in other desserts. They can easily be melted back down to a creamy texture allowing them to be used in recipes like toppings on cheesecake, extra gooey cookies, cake frostings and so much more.

In the 1650's American's discovered if they boiled sugar and water together, they would produce a sweet hard candy. In 1886, Hershey founded the Lancaster Caramel Company and the caramel was here to stay.

You can also make your own homemade caramel sauce with a very simple process.
