This delicious Pesto chicken with tomato cream penne is to die for! With a healthy Pesto olive oil dressing, it's about as light as a pasta can be! If you're watching the midsection but still craving a creamy pasta dish, this ones for you. If you're not too concerned about the calorie count, try substituting your skim milk for some half & half for an even creamier dish.

Chicken can be prepared in so many different ways, but a good pesto chicken pasta is a classic that has been around since the Roman ages, when the ancient Romans would eat a paste called Moretum. Moretum was a blend of crushed cheese, garlic and herbs. This basil heavy paste would form the origin story for modern day Pesto. Simply implement a ratio of three parts low-salt chicken or vegetable broth to every one part of olive oil and voila, you've got Pesto-light!
